Coconut Lemongrass Curry with Florida Pink Shrimp

For my impromptu girls night last week, my friend Jamie was in charge of the girlie drinks, so naturally, I was in charge of the eats for our soiree. And it couldn't have come at a more perfect time, since I had just made a recent trip to 99 Ranch and my fridge was stocked full of good ingredients like lemongrass and ginger. Also, girls night is all about the good company and that's, of course, always welcome. :)
With all my Asian inspired ingredients, I had everything I needed for a nice, flavorful curry. All I needed was a protein, so I stopped by the store for a pound of nice, large (10/15 per pound) wild Florida Pink Shrimp. They looked plump and delicious, like they would cook up without too much shrinkage. Nobody likes shrinkage *wink*.
Once I got home, I started by sauteeing some minced garlic, ginger, onion and lemongrass over medium high heat to flavor my curry (I was in a time crunch, so cheated by doing ALL of my chopping/mincing in my food processor. Such a Godsend!). Then I added a few diced carrots and one red bell pepper. As soon as my veggies were softened, I added a frozen bag of coconut milk (canned could be used also) and 2 teaspoons of curry powder. I simmered it all together and added my peeled and deveined shrimp towards the very end. Cooked them through and added a cup of frozen green peas for color and flavor. I brightened up my curry with some fresh basil and cilantro. With the food all set to go, it was time to get the gossip going along with the fabulous drinks that Jamie had concocted. Our amateur mixologist, had made a masterpiece with fruit and Stoli. Perfectly refreshing for the heat wave we were hit with last week, if you ask me. Yummy, sweet, succulent shrimp with a nice heat (the lemongrass and herbs really lighten the dish). Refreshing, yet decieving, drinks coupled with great company. Needless to say, we had ourselves a great time.

    Hi Reesie… I love 99 Ranch! Fortunately, we have a ton of them here in SoCal too. They make cooking asian food so much easier. Hope you had a wonderful B-day! :)
