Profiteroles with Bourbon Caramelized Bananas & Ginger Ice Cream

Tired of always making the same ol' banana bread with those ripe bananas??? I know I was. This week I found myself with four "too ripe for eating" bananas, and couldn't stand to make yet another loaf of banana bread. I picked my brain for inspiration. I wanted to make something fun and new. After thinking about it all day at work, I decided on profiteroles filled with caramelized bananas. I caramelized the bananas with a bit of brown sugar, cinnamon and a splash of bourbon. Out of nowhere.. ginger ice cream epiphany. I had made some ginger ice cream a few weeks back that would be perfect with the bananas. Mmm… warm, toasty profiterole fresh out of the oven, creamy ginger ice cream with a hint of spice, sweet, gooey bananas… all topped with hot chocolate sauce. Definitely a nice change from banana bread.
