Jicama, Orange, Radish and Avocado Salad
2 medium jicamas, peeled and cut into wedges
1 bunch of radishes (about 8), sliced thinly
3 oranges, pith removed and sliced into 1/4" slices
1 cup chopped cilantro
Juice of 2 limes and 1 orange
1 tsp chili powder
2 medium avocados
salt and pepper to taste
Combine all the ingredients except for the avocados. Chill for at least a few hours, or overnight. Add the sliced avocado just before serving.
