Almond Pancakes with Vanilla Bean Quark and Seascape Strawberries

Lazy weekend breakfasts usually involve me asking B, "Sweet or savory?" For the most part, the answer is savory, but on this occasion, with a 3-pack of Harry's Berries Seascape strawberries in hand, I persuaded him to start his day in a sweeter way. These strawberries are little guys packed with tons of flavor. A little tart, a little sweet, a lot of perfect! I had also picked up some delicious vanilla bean quark from the Spring Hill Cheeses booth at the market. They are generous with the samples and I had had the luck to try this fresh, cream cheese-like vanilla bean quark. Sweet with vanilla bean seeds running through it. The perfect compliment to strawberries and a nice alternative to syrup with pancakes. So the plan was born. I whipped up some pancakes made with almond meal and white flour and assembled little towers of quark and strawberries. Sometimes it's nice to enjoy the sweeter side of life!

    [this is good] That looks absolutely delicious, Julie!  I would never have thought to use quark in place of other toppings.

    wonderful.

    not sure why i do it but i always rip off the green bits on the strawberries. Is it necessary or am i being too precious. Rather would like to limit the work i need to do.

    Seascape strawberries? I’ll have to look for them. My all time favorite strawberries are Chandler strawberries, they are amazingly sweet, luscious and juicy. Unfortunately, they are very delicate and do not ship well, thus are not normally sold at the markets often.
    How lucky you are B for Julie making this breakfast! Hope you enjoyed it!

    Thanks Purple! I would say it’s like a cross between ricotta and cream cheese. Very delicious even on walnut bread with some honey!

    Yes yes yes in that “when harry met sally” kind of way. Almond pancakes sound divine with strawberries. Now if only I can get #1 brunch-making husband to prepare them for me…
