Broccolini, Morel & Campari Tomato Pizzetta

In a bad mood? Frustrated? Angry? Take out all your aggression on some pizza dough. You can punch the crap out of it. Squeeze it as hard as you can… and it'll take it and then reward you. I came home from work yesterday in a complete funk. I was running off of fumes and work was crazy with all that darn data that needed entering. I was feeling grumpy, but I swear, as soon as I started working with my pizza dough, I instantly felt better. I was folding it over itself, punching it down. There's just something about working with your hands. Satisfaction becomes tangible. The product of your work forms right before your very eyes. The dough becomes more elastic as it begins to take shape. All it needs is a sprinkling of silky flour when it uncovers a sticky spot. It'll let you know when it's ready to rest and ready to rise.
My dough was begging to be made into pizzettas (aka mini pizzas). I adore mini food. So cute. What's not to love? I topped it with crisp broccolini, meaty morel mushrooms, sweet Campari tomatoes, toasted pine nuts and a nice generous layer of tangy goat cheese mozzarella. Now why was I feeling grumpy? I forget. I'm just happy and full, and happy because I'm full.

    haha, that’s such a cute pizzetta! and yes, pizza is the ultimate comfort food… hmm… and considering how my job has been lately… maybe i need to go punch me up some pizza too~
