Burger with Truffle Cheese & Pesto on Herbed Focaccia

When I just feel like having a casual, no-frills dinner I often find myself turning to the ol' standby burger (veggie, that is). You've got your protein, carbs, veggies and tons of flavor all wrapped up in one little package. Eating with your hands is also an extra perk! :)  We had ours on homemade focaccia rolls, with Trader Joe's truffle cheese, baby spinach, basil pesto, grilled Maui onions and some Dijon mustard. Could have used a slice or two of tomato, but other than that it was perfect. Flavor explosion.. warm, toasty roll spiked with bits of chopped rosemary, creamy, garlicky pesto, sweet grilled onions, just-melted truffle cheese and fresh spinach all served to accentuate the moist veggie patty that was loaded with tons of shredded carrots, grilled corn and mushrooms. What would you put on yours???

    OMG, looks awesome!  (Though my burger would be the unhealthy, non-veggie kind)  Been wondering how the Trader Joe’s truffle cheese was every time I see it in the store–fabulous idea for topping burgers!

    I love TJ’s Truffle cheese. It’s great on crackers and in omlettes too.

    *drool* I have never noticed the truffle cheese at TJ’s before. I am definitely going to have to pick some up next time I am there. What kind of veggie burgers do  you buy (or do  you make your own)?

    Definitely get the truffle cheese next time your at TJs. Someone brought it over for a dinner party and I’ve been hooked ever since. I usually make my own veggie patties out of TVP, but I like the Morninstar ones too!
