Recipe: Cucumber Daiquiri Cocktail

Most people–or at least I use to–think of a daiquiri as giant, pink, blended drink served out of a plastic Eiffel Tower in Vegas. In actuality, it’s a classic cocktail that’s simply rum, lime juice, and simple syrup. Shaken and strained. That’s it. Today, I’ve taken the traditional version and added a refreshing bit of cucumber and mint to liven it up. I hope you’ll try it.

Cucumber Daiquiri

2 ounces light rum (I used Brugal)

1 ounce lime juice

1 ounce cucumber juice

1/2 ounce simple syrup

cucumber slices and mint to garnish

Directions

1. Pour all the ingredients over ice in a shaker.

2. Shake and strain into chilled glasses.

3. Garnish with mint and additional cucumber slices if desired.

serves 1
