Recipe: Silky Smooth Chocolate Torte with Macadamia Nut Crust



As a new mom, I’m often told to “be kind to yourself.” And now that Owen is in the throes of a sleep regression while teething, I get it! Honestly, I’ve never had so much fun, while feeling so face-plantingly sleep deprived. Case in point: My living room is a hot mess and yesterday, I sent two emails where I referenced an attachment, sans attachment. Doh! Instead of feeling bad over a silly mistake or an unruly living room, I just let. it. go. That’s part of being kind to yourself. You have to treat yourself with a little compassion. You have to treat yourself in general. Whether that means taking time to go to yoga class or eating something delicious, you deserve it!

So in the spirit of Valentine’s Day, the holiday of L-O-V-E, I’m going to love on myself a little with one of my favorite things in the world: chocolate. I used Silky Smooth DOVE® Dark Chocolate PROMISES to make a dreamboat chocolate torte. True story: This is the kind of dessert where you might plan on sharing a piece, but you’ll likely want your own serving for yourself. That happened to Brock and me when we were recipe testing. Instead of alternating bites, Brock squirreled away his own piece. Don’t worry. I got a little one all to myself too.

I used macadamia nuts for the crust because macadamia nuts are like the best of the best as far as nuts go, and we’re going all out. I didn’t add any extra fats to the crust because the macadamia nuts are rich already, but I did add graham cracker crumb to make the crust a little sturdier. You could easily make this GF by omitting the graham cracker; the crust would just be a little more crumbly.

When I was making the whipped cream for this recipe I accidentally used orange extract instead of vanilla, which ended up working wonderfully. Citrus pairs so well with the dark chocolate and berries, so I kept it.

Silky Smooth Chocolate Torte with Macadamia Nut Crust

Crust

2 cups roasted and salted macadamia nuts,

1/3 cup sugar

¼ cup graham cracker crust

one pinch sea salt

Filling

1 1/4 cups heavy cream

1 8.87 ounce bag of Silky Smooth DOVE Dark Chocolate PROMISES, unwrapped and chopped

1 large egg + 1 yolk

1 teaspoon pure vanilla extract

one pinch sea salt

 

1 cup heavy cream

3 tbsp powdered sugar

1 tsp orange extract

1 cup raspberries or strawberries

Directions

For crust: Preheat oven to 350°F. Pulse together all ingredients in a food processor and press evenly onto bottom and up side of a 9-inch springform or tart pan with removable bottom. Bake about 10-15 minutes and cool completely before filling.

For filling: Bring cream to a boil, then add chopped DOVE Dark Chocolate PROMISES and let stand for 6 minutes. Stir until smooth. Whisk together eggs, vanilla, and sea salt in another bowl, then whisk into melted chocolate a few tablespoons at a time, tempering the eggs. Pour filling into macadamia nut crust. Bake about 25 minutes, until the filling is almost set. Cool tart.

For whipped cream: In a mixer, whip heavy cream, powdered sugar and orange extract until peaks form.

To serve: Garnish torte with whipped cream and berries.
