Recipe: Strawberry-Lemongrass Pimm’s Cup

Last week, I had the most refreshing strawberry lemongrass pimm’s cup at The Corner Door. So when I saw these Harry’s Berries strawberries at the farmer’s market, I just had to recreate the cocktail at home. It would be perfect for a summer BBQ!

 

Strawberry Lemongrass Pimm’s Cup

Ingredients

1 pint strawberries, hulled and sliced

2 stalks lemongrass, coarsely chopped

1 cup sugar

2 cups water

8 oz Pimm’s No. 1

8 oz ginger ale (You can also use a lemon-lime soda, but I have a thing for all things ginger)

ice

lemon twist, sliced cucumber and strawberry to garnish

Directions

For the strawberry-lemongrass syrup: Place the strawberries, lemongrass, water and sugar in a medium-sized saucepan and bring to a boil. Reduce heat to low and simmer for about 20-25 minutes. Strain and cool. Jar and refrigerate for up to one week. 

For the cocktails: Combine 2 ounces of strawberry-lemongrass syrup, 2 ounces Pimm’s and 2 ounces ginger ale per cocktail. Pour over ice. Garnish with lemon twist, cucumber and sliced strawberry.
