Tri-color Potato Salad

Potato salad is one of those quintessential Summer picnic dishes where a million different variations on the same recipe exist. Some like it eggy. Some like it olivey. I like mine with tons of chopped up tangy cornichons and creamy yogurt cheese in place of mayonnaise. Dijon instead of yellow gives a nice heat.  And if it's convenient to add a splash of color, you bet your ass that those purple Peruvians are going in.

    I like a sweetness to mine, so I dose it with raisins and apples. Yogurt cheese has a flavor?

    [this is good] Potato salad..one of my favorite American dishes. This looks delicious. I like mine with yogurt as well, and Lots of Dijon mustard. Something green..parsley or cilantro or scallions.

    So pretty! I love the yogurt cheese in place of the mayo. I can’t handle mayo. Aside from yogurt and dijon (and seasoning) is there anything else you put in the dressing? As always, this looks great!

    Potato salad goes with everything over here.  Actually we call it “mac salad” but it’s basically the same thing.  We use it in all our “plate lunches” and usually someone will always bring it to a potluck.  I especially like it with a nice bowl of chili or curry.

    Hi Mexican Shrimp Cocktail.. I’ve had it with apples (which I love) but I’ll have to add raisins next time. What a great new idea. :)

    Purple my yogurt loving sister! Fresh herbs totally make the salad. I use whatever I have on hand.

    Hi Elly! This salad had lots of fresh basil & thyme in it also. Sometimes I’ll add a little vinegar, but since I used SO many cornichons, it was plenty tangy enough.

    Oh California Pearl… everybody deserves a little potato salad every once in a while. 😉

    OMG! Our comment on the last post worked! WTF? it’s so weird! Sometimes Vox works for us, sometimes not. Well, now that we’re finally in, it’s time to feast!
    We just made a potato salad for our HUGE party yesterday! Ours has fresh corn and cumin. It’s our Cumin Corn Potato Salad. We’ll be writing about it soon!
